The berry processing at the Lynn Lake Frontier High School has evolved from a breakfast program to being
integrated into the school curriculum.
Berries are processed under the watchful eyes of instructors. The students are introduced to and learn
about hygiene, nutrition values, and the art of food preparation.
Frozen berries are thawed out then rinsed and disinfected in a chlorine solution and finally rewashed. The
juice is separated from the pulp using hot steam. The end products of pulp and juice are now ready for
final preparation into juice, jam, fruit leather or popsicles. The high content of benzoic acid in pulp and juice
gives these products a very long shelf life.
